Table For One

It is really hard to cook for one person, you either end up with too much or not enough.  It also doesn't seem worth it to mess up dishes and your kitchen for the effort of only cooking for yourself.  I am going to try my hardest to avoid fast food just because I don't feel like cooking. 
This is one of my favorite go to meals for one person.  It is healthy, quick, easy, and only messes up one pan!

Chicken with Zucchini and Onions
2 pieces of boneless skinless chicken breasts
1 medium zucchini
1 small onion
EVOO
Tony's cajun seasoning

1.  Cut the chicken into bite size one inch pieces. Place pieces into a ziploc bag with approximately 1 tbsp of EVOO. 
2.  Cut up the onion into pieces equal size of the chicken, and place in bag.
3. Season and shake
4.  Cook onion and chicken in your saute pan until outside of chicken is no longer pink.
5.  Add the chopped zucchini.  Continue cooking until the chicken and is fully cooked.

Eat up and clean your ONE dish!

It would be very easy to interchange the veggie you used, substitute bell peppers or yellow sqaush!
